Kenji at Serious Eats calls this recipe the best burger in the world, so of course I made it tonight to find out. Maybe it is the best burger, maybe not—but it is the best burger I’ve ever made. The burger was juicy and crispy and every bit as good as the article claims. I think my 8” all clad pan is permanently brown as a result, but I’ll just call it a burger pan and start making these on a regular basis.
